Place the fruit, simple syrup and lemon juice into a blender and blend until smooth.
Place sugar cube in bottom of champagne glass. Add bitters, purée and peach schnapps. With the back of a spoon, lightly mash the mixture to break up the sugar cube. Fill glass with champagne. Enjoy!
