Delicious Egg Salad

Delicious Egg Salad aka Egg Pâté! This is my step-mother’s recipe! She’s from Poland, and it’s one of her family recipes from when she was a child. In Polish it’s called “pasta!” Yup…. pasta! In english it translates to pâté because of it’s consistency. I love eating this for breakfast… along with a really good seeded bread… like Dave’s 🙂 YUM! Enjoy!!

Egg Pâté Ingredients:

  • 8 hard boiled eggs (make sure you check out my post for the perfect hard boiled egg that peels effortlessly!)
  • 1/8 tsp. salt
  • 2 Tbs. soft butter (I always use unsalted)
  • 2 Tbs. mayonaise
  • 4 Tbs. green onion, chopped (or chives)

Grab your perfectly peeled eggs! Look at these beauties!!

Perfectly Cooked Hard Boiled Eggs

You can either shred your eggs using a grater… or use an egg slicer like I do! Just place the egg in the slicer, press down, rotate your egg and do it again. Look how easy that is!!

Egg saladI served mine with a sprinkle of chives on top and a slice of toasted bread… oh and a hot cup of coffee!! Enjoy!
