Dice the watermelon into manageable chunks. Blend in blender until smooth (I used my vitamix). You may need to stop your blender and smash the watermelon down into the blades to get it going. Once blended, strain through a sieve. Set the watermelon juice aside.
In a large pitcher, combine the water, lemon juice, simple syrup and watermelon juice. Refrigerate for an hour or until chilled. Serve over ice and garnish with sliced watermelon or mint sprigs! Enjoy!!
