Delicious and easy Baked Oatmeal

Ingredients
  • 4 cups Old Fashioned Oats (not the quick kind!!)
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg (fresh preferably)
  • 3 eggs
  • 1⅓ cups milk
  • ½ cup butter, melted
  • ¼ cup honey (tip: local honey keeps your allergies in check!)
  • ⅓ cup brown sugar
  • 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees.
  2. Butter an oven safe, 2 quart dish. Set aside. (I used a round 2 quart dish)
  3. In a large bowl, combine the oats, baking powder, salt, cinnamon and nutmeg. Set aside.
  4. In a medium bowl, combine the eggs, milk, melted butter, honey, sugar and vanilla. Mix well and pour into the large bowl of dry ingredients. Mix until completely incorporated.
  5. Pour mixture into the buttered dish and bake for 30 minutes. Let cool for 5 minutes. Serve warm with milk or cream, and whatever other topping you'd prefer. Enjoy!
