Grandma's chewy oatmeal cookie recipe!

Ingredients
  • 1½ cup flour
  • ¾ tsp. salt
  • 1 tsp. baking soda
  • 1 cup softened butter (2 sticks)
  • 1 cup white sugar
  • 1 cup unpacked brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 cups quick oatmeal
  • ½ cup chopped walnuts
  • Raisins if using (I add about ½ cup)
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift flour, salt and baking soda into a small bowl. Set aside.
  3. Cream the butter and both sugars. (I use my kitchen aid mixer, but a hand mixer works well too)
  4. Then add both eggs. Mix until light and fluffy.
  5. Stir in vanilla.
  6. Add your bowl of dry ingredients. Mix until incorporated.
  7. Add in one cup of oatmeal at a time. Mix until incorporated.
  8. Add in walnuts and raisins, if using.
  9. Place large globs of dough on an un-greased baking sheet. (I made mine about the size of a mandarin orange... maybe 3-4 tablespoons??) This will fill up your cookie sheet quickly. I typically only get 8 cookies on one sheet.
  10. Bake for 14-17 minutes. Make sure you check them at 14 minutes!! You want them only ½ baked but to hold their shape! You'll get hard, crispy cookies if you over bake them.
  11. Place them on a cooling rack and let cool. Dig in!!!
