Delicious Caprese Tortellini Pasta Salad

Ingredients
  • 2 packages Cheese Tortellinis (I buy the big packages at Costco)
  • 1 pound Fresh Mozzarella (If not making my own, I also buy this at Costco)
  • 1-2 pints Grape or Cherry Tomatoes
  • ½ cup Basil, chopped or julienned
  • 1 pound Salami (I like bigger chunks of salami, so I buy I the big log at Costco. You can omit the salami if you are feeding any vegetarians)
  • Newman's Own Family Recipe Italian Dressing (Did you know that they donate all of their profits to charity??? How cool is that?)
Instructions
  1. Depending on how large of a crowd you're feeding, cook 1-2 packages of tortellinis according to the package directions. After cooking rinse in cold water to cool down... you don't want your mozzarella cheese to melt when you add it to your pasta! If you're only cooking one package, adjust the other ingredients accordingly.
  2. Cube your mozzarella and salami, if using.
  3. If your tomatoes are large, cut them in half. If they are small just throw them in!
  4. Chop or julienne your basil. Add more or less to your taste. I LOVE basil, so I like a lot of it :-)
  5. Shake your dressing well and coat your pasta. I typically use about half of the bottle.
  6. Toss well and enjoy!!!
