Ingredients
Goat cheese salad
  • 1 log plain goat cheese
  • 2 egg whites
  • 1 Tbs. water
  • Fresh bread crumbs
  • Olive oil
  • Butter
  • Mixed salad greens
  • Ripe pear, sliced
Dressing
  • 2 Tbs. Champagne vinegar
  • 2 Tbs. fresh lemon juice
  • ½ tsp. salt
  • ¼ tsp. fresh ground pepper
  • ⅛ tsp. sugar
  • 1 large egg yolk
  • 1 cup extra-virgin olive oil
Instructions
  1. Beat your egg whites with 1 Tbs. of water. Set aside.
  2. Slice your goat cheese into ½ inch rounds. The best way to slice goat cheese, is to use dental floss! Use plain, unflavored, dental floss, so your cheese doesn't taste like mint! :-)
  3. Dip the cheese rounds into your egg whites, then into the fresh bread crumbs. Make sure to completely cover the cheese with the breadcrumbs. Place your cheese rounds on a rack and put in the fridge for at least 15 minutes.
  4. In a food processor, blend your vinegar, lemon juice, salt, pepper, sugar and egg yolk for one minute. With the motor running, slowly drizzle in your olive oil. Your vinaigrette will be super creamy and thickened. Toss the salad greens with the dressing.
  5. In a saute pan, melt 1 tablespoon butter and 1 tablespoon olive oil, over medium-high heat. Quickly cook the cheese rounds until browned on both sides, but the inside doesn't melt. Top each salad with two cheese rounds and sliced pear. Bon Appétit!!
