1 cup Cornflakes, crumbled (I used Kelloggs Cornflakes)
2 Tbs. Butter, softened
¼ cup Parsley, chopped
Instructions
Preheat oven to 400 degrees.
In a small bowl, stir together the dijon, honey and garlic. Set aside.
In another small bowl, mix together the cornflakes, butter and parsley.
Place your salmon, skin side down, in a baking dish.
Spoon the mustard mixture on top of the salmon.
Top with the crumb mixture.
Bake for 15-20 minutes, or until the salmon is just flakey. Let sit for 5 minutes and serve. :-)
Notes
Salmon is very easy to overcook... and no one likes dry salmon. Check it after 10 minutes and use two forks to see if it "flakes" apart. You want to take it out as soon as it can "flake" or it will become dry and overcooked.
