French Toast Muffins

Ingredients
  • 1 loaf French Bread (I like to use day old bread... Challah bread or Brioche would be fabulous too!)
  • 2 cups Milk
  • ½ cup Heavy Cream
  • 8 Eggs
  • ¾ cup Sugar
  • 1 tsp. Cinnamon
  • 1 Tbs. Vanilla Extract
Ingredients for topping:
  • ½ cup brown sugar, packed
  • ⅓ cup all purpose flour
  • ½ tsp. cinnamon
  • 5 Tbs. butter, softened
  • Pinch of salt
Instructions
  1. Using a sharp bread knife, so you don't squish your bread, cut your bread into ½ inch cubes. Set aside.
  2. In a large bowl, whisk together the milk, cream, eggs, sugar, cinnamon and vanilla. Set aside.
  3. Grease your muffin tin with butter. Fill each muffin cup with the bread cubes. You will think to yourself... How the heck am I supposed to fit all of this bread into 12 muffins?? Don't worry! Carefully and SLOWLY pour the egg mixture over the bread. Press down, and add more bread. Pour in more egg mixture, and add more bread. Continue to do so until you've added all the bread and all (or most) of the egg mixture. It will look like this...
  4. Cover with plastic wrap and refrigerate for 1-2 hours or overnight!
  5. Preheat oven to 350 degrees.
  6. In a small bowl, combine your topping ingredients. With a pastry cutter, or fork, mix until crumbly. Sprinkle topping over each muffin. Bake for 35-40 minutes, or until golden brown. Cool for 5 minutes. Serve with your choice of toppings! I like to serve with butter, or butter and syrup, or with fruit and fresh whip cream. Enjoy!!
