Fresh Pico de Gallo

Fresh Pico de GalloFresh Pico de Gallo! There’s nothing better!! The smell of the cilantro and lime just fill up your kitchen. You don’t get that when you buy it pre made. The flavors are so vibrant when it’s fresh…. not like it is sitting in a tub in the grocery fridge. And homemade Pico de Gallo is so easy to make! It literally takes a few minutes and you’ve kick started your mexican feast 🙂 I use my Pico de Gallo in many recipes. Such as my homemade Ceviche, tacos, burritos, omelets, etc. And of course just by itself with really good tortilla chips!! I had to beat Mr. Jones off with a wooden spoon last night when I made this just to snap a quick photo before he dug in!! He was literally drooling and hovering over me! LOL So before you buy a tub of Pico de Gallo at the store for your Cinco de Mayo parties…. whip up some homemade instead!

Ingredients:

  • 5-6 medium tomatoes, diced (I used on the vine, because they’re my favorite)
  • 1 small white onion, finely diced (I like to use sweet onions, like walla walla)
  • 1 jalapeño, seeded and finely chopped
  • 1 cup, chopped cilantro (or more! I use one entire bunch)
  • 1 lime, juiced
  • Salt to taste

Instructions:

  1. Combine all ingredients in a medium size bowl. I use about 1/2 tsp of salt and then taste from there. Cover and chill in the fridge for 20 minutes.
  2. Pico de Gallo is best fresh! It’s just ok the next day. ***You can also add scallions to this recipe. I usually do, but forgot to buy them this time around! 🙁
