Watermelon, Mint, Lemon Drop Martini

Watermelon, Mint Lemon Drop | vixenskitchen.comWatermelon, Mint, Lemon Drop Martini! I had no idea that today was National Martini Day, until I saw something about it online this morning. Since it’s such an important holiday and all 😉 I figured I better make a martini! So here is my concoction… Watermelon, Mint Lemon Drop! It was SUPER helpful that I had made watermelon lemonade yesterday…. so this drink literally only took a few seconds to make. It was such a gorgeous day out today, and it was my kids first full day of their summer break too! They were playing in the sprinklers and jumping on the trampoline, while enjoying yummy watermelon lemonade… so it was a no brainer to make an adult version for Martini Day 🙂 I’m not drinking alcohol right now, until my arthritis flare up is gone…. BUT I sneaked a sip and it was delish!! Lucky for my bestie, Bonnie though!! She got to come home to sun kissed kids, exhausted from hours of playing, and an ice cold Watermelon, Mint Lemon Drop!! 🙂

Ingredients
  • 1½ cups watermelon lemonade, click HERE for recipe
  • 3 ounces good quality vodka
  • 2-3 sprigs fresh mint
  • lemon peel
  • ice
Instructions
  1. Put two martini glasses in the freezer to chill.
  2. Fill a martini shaker half full of ice. Add the mint and lemon peel. (I used the peel of about ¼ of a small lemon). Smash the mint, peel and ice with the handle of a wooden spoon, until the mint leaves are bruised and it's all mixed up. Add the vodka and watermelon lemonade. Shake vigorously. Strain into chilled martini glasses. Enjoy!!
