Killer Cornbread

Killer Cornbread | www.vixenskitchen.comKiller Cornbread! Nothing beats warm, homemade, impeccably cooked cornbread. Topped with creamy, sweet honey butter. EXCEPT Killer Cornbread that is!!! 🙂 Hands down, this cornbread is another one of those “OH NO!” recipes. Where it’s just too good… but in the sinfully bad kind of way. The kind of recipe that you just have to have more of, regardless of all the melted butter and ooey gooey cheese inside of it!! This cornbread is sweet and savory. It has a creamy topping with melted cheesy goodness. It’s one of those recipes that once you’ve tried it…. regular cornbread will never be the same.

Ingredients
  • 1 large sweet onion, chopped small
  • ½ cup butter
  • 3 cups corn muffin mix [I use (2) 8.5 ounce boxes of Jiffy cornbread mix]
  • 2 eggs, beaten
  • ⅔ cup milk
  • 1 can creamed corn
  • 6 drops Tabasco
  • 1 cup sour cream
  • 2 tsp salt
  • 2 cups cheddar cheese, shredded and divided
Instructions
  1. Preheat oven to 425 degrees.
  2. Slowly sauté onion in butter until soft. Turn off heat and mix in the sour cream, salt, and 1 cup of cheddar cheese.
  3. In a large bowl, combine muffin mix, eggs, milk, corn & Tabasco.
  4. Pour this mixture in a 9 x 13, buttered baking dish.
  5. Carefully and evenly pour the onion mixture over the top of the batter in baking dish.
  6. Sprinkle remaining cheese over the top.
  7. Bake @ 425 for 25-30 min or until done.
Notes
Mixture will seem runny, but bakes up just fine.

    This corn bread melts in your mouth. The onions, butter, cheese and sour cream make it rich, but not too much so. The Tabasco gives it that extra punch. I’ll make this again.

    Tried this recipe last weekend….WOWZER! We all loved it! Definitely be baking this again. Excellent with Chili, beans or soup. Give it a try! I also like that it is baked in 13 x 9 which allows me to freeze some for later. Thanks so much for sharing this recipe with us!
