Baked Honey Dijon Salmon

Baked Honey Dijon SalmonBaked Honey Dijon Salmon! I just love salmon, and living in the beautiful Puget Sound of the Northwest we have an abundance of it! Salmon is such a versatile fish and can be cooked so many ways. I love this Baked Honey Dijon recipe because it takes minutes to make and the kids love it! Plus, they love the fact that there’s crunchy cornflakes on top! 🙂

Serves: 4-6
Ingredients
  • 1½ pounds Salmon fillet (I used Wild King Salmon)
  • 3 Tbs. Dijon mustard
  • 1 Tbs. Honey
  • 1 Garlic clove, minced
  • 1 cup Cornflakes, crumbled (I used Kelloggs Cornflakes)
  • 2 Tbs. Butter, softened
  • ¼ cup Parsley, chopped
Instructions
  1. Preheat oven to 400 degrees.
  2. In a small bowl, stir together the dijon, honey and garlic. Set aside.
  3. In another small bowl, mix together the cornflakes, butter and parsley.
  4. Place your salmon, skin side down, in a baking dish.
  5. Spoon the mustard mixture on top of the salmon.
  6. Top with the crumb mixture.
  7. Bake for 15-20 minutes, or until the salmon is just flakey. Let sit for 5 minutes and serve. 🙂
Notes
Salmon is very easy to overcook... and no one likes dry salmon. Check it after 10 minutes and use two forks to see if it "flakes" apart. You want to take it out as soon as it can "flake" or it will become dry and overcooked.

Bake for 15-20 minutes, or until the salmon is just flakey. Let sit for 5 minutes and serve. 🙂

    I’m always looking for new ways to make salmon. This was very tasty. I used corn flake crumbs instead of crushed cornflakes, as that’s what I had on hand. I’ll be making this again.
