Coffee Cake

Coffee CakeWho doesn’t love coffee cake?? Especially when it’s warm and fresh out of the oven! We had a long weekend and I wasn’t able to get to the grocery store. I had to wake up the kids for school this morning when I realized that I had just under a cup of milk… so no cereal or oatmeal… and we only had a few eggs… so no eggs and toast either! I wasn’t sure what I was going to do for breakfast, when I realized I DID have everything for coffee cake! If I can whip this up on a school morning for my four chitlins and my neighbors three as well…. then you KNOW it has to be an easy and quick recipe!! 🙂 They devoured the coffee cake and wanted second and third helpings… if I had let them! But I have a friend coming over this morning… so I made them save her ONE piece! 🙂 They were happy campers as they trotted off to school after having “CAKE” and bananas for breakfast. I might be in trouble though…. I think I’ve opened pandora’s box on this one! They’re going to want Coffee Cake every morning now!! Uh oh……  😉

Serves: 8-10
Ingredients
  • 1½ cups all-purpose flour
  • ¼ cup white sugar
  • 2½ tsp. baking powder
  • ¾ tsp. salt
  • ¼ cup butter, softened
  • ¾ cup milk
  • 1 egg
Ingredients for topping:
  • ½ cup brown sugar, packed
  • ⅓ cup all purpose flour
  • ½ tsp. cinnamon
  • 5 Tbs. butter, softened
Instructions
  1. Preheat oven to 375 degrees.
  2. In large mixing bowl, combine the flour, sugar, baking powder, salt, milk and egg. Stir together. Add the butter and beat vigorously for 30 seconds.
  3. Grease a round 9 inch baking pan with butter. Add a Tablespoon of flour into the pan and "flour" the pan. Dump out the excess flour. If you don't have a 9 inch baking pan, you can use on 8 or 9 inch square pan.
  4. Spread the batter into your greased and floured pan.
  5. In a small bowl, combine your topping ingredients. With a pastry cutter, or fork, mix until crumbly. Sprinkle topping over batter. Bake 25-30 minutes or until wooden toothpick comes out clean when inserted into center of cake.

    PERFECT – I am in the middle of moving and still have the ingredients in my canisters and thought I’d have to dump them this morning – but no! Instead I get to use them up and have a wonderful smelling house and delicious treat!! Can’t wait – thank you!
