May 30, 2014 by Kelly

Creamy Four Cheese Macaroni and Cheese | Aged white cheddar, cream cheese, mozzarella and parmesan | vixenskitchen.comCreamy Four Cheese Macaroni and Cheese! Comfort food for sure!! My kids just love mac and cheese…. especially when it’s homemade. So I’m always experimenting with the cheeses to see which ones they like the best and just to switch it up a bit. This week during my Costco shopping trip I saw that they had an aged white cheddar…. so white cheddar mac and cheese here we come!

Serves: 10
Ingredients
  • 1 pound elbow macaroni noodles
  • 4 Tbs. butter
  • 6 Tbs. flour
  • 2½ cups milk
  • 2 tsps. Johnny’s seasoning (or lawry’s)
  • ¼ tsp. white pepper
  • 4 ounces cream cheese
  • 12 ounces white cheddar cheese, shredded
  • 6 ounces mozzarella cheese, shredded
  • ⅔ cups fresh white bread crumbs
  • 4 ounces parmesan cheese, shredded
Instructions
  1. Preheat oven to 350 degrees.
  2. Cook pasta until al dente. Drain and set aside.
  3. Meanwhile in a large pot, melt the butter on low. Add the flour and stir constantly for 2-3 minutes. Slowly pour in the milk while whisking until smooth. Turn heat up to medium and cook while whisking until thick, about 5 minutes. Add the Johnny’s and pepper. Add the cream cheese and whisk until smooth.
  4. Remove from heat, and stir in the cheddar and mozzarella cheese until smooth. Stir in the pasta. Pour into a 9 x 13 pyrex dish.
  5. Mix the bread crumbs and parmesan cheese together in a small bowl. Top the macaroni with the bread mixture. Bake for 30-40 minutes, or until golden brown on top. Enjoy!!
